Banana Coconut Zucchini Bread

1/2 C applesauce (or yogurt)
1/2 C coconut oil
3 eggs
1 C brown sugar
1/2 C white sugar
2 tsp vanilla extract
2 C whole wheat flour
3/4 C all-purpose flour
1/4 C mix of chia seeds, wheat germ, flax (or just more flour)
1 Tbsp cinnamon
1/2 tsp nutmeg
2 bananas
2 1/2 C zucchini, grated
1/2 - 1 C shredded coconut

Wet ingredients - mix. Add dry ingredients - mix. Don't over mix. If it seems a little dry add more applesauce. Add zucchini and coconut and mix. Bake at 350. I do muffins usually so that takes about 18-20 minutes. Bread...maybe 40-50 minutes??

Crazy Zucchini Cookies

Crazy Zucchini Cookies

1 stick butter (1/2 C)
1/2 C brown sugar
1 egg
1 tsp vanilla
1 C whole wheat flour
1/2 C white flour
1/2 tsp baking soda
1 C rolled oats
1 – 1 1/2 C shredded zucchini
1/2 C shredded coconut
1 C butterscotch chips
Wet ingredients, dry ingredient…mix till just mixed. Add zucchini and oats, mix until just blended. Add coconut and butterscotch chips (you could do whatever…nuts, raisins, chocolate chips)
Bake 350 for about 11-13 minutes.

Zucchini Pancakes-The Next Level

That is what my family termed this round of zucchini pancakes. I used my original recipe with changes…(I double this)
1 1/4 cup whole wheat flour
1/4 cup mix of chia seeds, wheat germ and flax
1/2 cup cornmeal
2 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon cinnamon
2 eggs
1-2 tablespoons coconut oil, melted
1  cup milk
water to desired consistancy…I probably used about 1/4 to 1/2 cup water but we like our pancakes thick
1 cup grated zucchini
Mix the wet ingredients, then add the dry…I add the water and zucchini at the end to get it how I want it ;)

Italian Sausage Soup

  • 1 pound Italian sausage
  • 1 clove garlic, minced
  • 2 (14 ounce) cans beef broth
  • 1 (14.5 ounce) can Italian-style stewed tomatoes
  • 1 cup sliced carrots
  • 1 cup barley (can use beans)
  • 2 small zucchini, cubed
  • 1-2 cups spinach (frozen works good)
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic salt

Cook the sausage, drain...add everything :)

PS I have used different sausage and way, way less of it...

Black Bean Zucchini Casserole

Black Bean Zucchini Casserole
*allrecipes with changes


1 1/2 cup brown rice, cooked in broth

1/3 cup diced onion
1 medium zucchini, thinly sliced (I julienne mine)
1/2 cup sliced mushrooms
1/2+ teaspoon cumin
salt/pepper to taste
1 (15 ounce) can black beans, drained
1 (4 ounce) can diced green chile peppers, drained
1 1/2 cup shredded carrots
2 cups shredded cheese (cheddar or a mexican mix)

Heat oil in a skillet over medium heat, and cook the onion until tender. Mix in the zucchini, chicken, and mushrooms. Season with cumin, salt, and ground cayenne pepper. Cook and stir until zucchini is lightly browned
In large bowl, mix the cooked rice, onion, zucchini, chicken, mushrooms, beans, chiles, carrots, and 3/4 the cheese. Transfer to the prepared casserole dish, and sprinkle with remaining cheese.
Cover casserole loosely with foil, and bake 30 minutes in the preheated 350 oven. Uncover, and continue baking 10 minutes, or until bubbly and lightly browned.

    Coconut Zuchinni Bread


    •  
    • 1 egg
    • 1/2 cup applesauce
    • 1/8 cup vegetable oil
    • 1 cup white sugar
    • 1 cup grated zucchini
    • 1/2 teaspoon vanilla extract
    • 1 1/2 cups all-purpose flour
    • 1/2 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 3/4 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/2 cup flaked coconut
    • 1/2 cup golden raisins
    • In mixer combine egg, applesauce, oil and sugar. Add zucchini and vanilla. Combine dry ingredients and add to mixer. Stir in coconut and raisins. Bake at 350

    Herb Zucchini Casserole

     Herb Zucchini Casserole
    *off allrecipes with some changes

    1 1/2 C brown rice, cooked in broth

    1 1/2 pounds zucchini, cubed
    1 cup sliced green onions (or yellow onions)
    1 clove garlic, minced
    1 1/4 teaspoons garlic salt
    1 Tbsp fresh basil (1/2 teaspoon dry basil)
    1/2 teaspoon sweet paprika
    1/2 teaspoon dried oregano
    1 1/2 cups seeded, chopped tomatoes
    2 cups shredded sharp Cheddar cheese, divided

    Saute onions and garlic. Add zucchini and saute till tender. Add herbs/spices. Add tomatoes, rice and cheese. Combine. Place in casserole dish (9x13) and top with a little more cheese (you can choose a different type too). Bake for about 20 min at 350.

    *I did have 2 extra sausage links I added to this recipe once. It was good.

    Sausage Zuchinni Casserole

    1 1/2  cup uncooked brown rice

    3 morning star sausage patties, cut up/crumbled (1/2 pound pork sausage)
    1/2 cup chopped onion

    2 cloves garlic, minced
    1 cup diced fresh tomato

    1 cup corn (frozen or fresh)
    2-3 cups cubed zucchini squash
    1/2 cup chopped mushrooms

    4 oz cream cheese
    1/4 cup feta cheese
    1 cup sharp cheddar (or more :)
    pinch thyme
    pinches of dill weed
    pepper to taste


    Cook rice. In a pan saute garlic and onions. Add tomtoes, sausage, corn, zucchini, mushrooms and cook till slightly tender (or however you want them). Add cream cheese and mix till cream cheese is melted. Remove from heat and stir in rice, feta, cheddar, thyme, dill and pepper. Stick in 9x13. Cover with a little more extra cheddar :) Cook at about 300 till the cheese is melted and it is warmed through.

    Sweet Zucchini Pancakes

    I found this recipe just browsing the web one day. I can't remember where is came from...

    1 cup all-purpose flour
    1/2 cup whole wheat flour
    1/2 cup cornmeal
    2 tablespoons brown sugar
    2 teaspoons baking powder
    1 teaspoon cinnamon
    1/2 teaspoon salt (you can do less)
    2 eggs
    2 tablespoons butter, melted (you can do a little less)
    1 1/4 cup milk
    1 cup grated zucchini, excess water squeezed out


    Mix wet ingredients, mix dry ingredients...mix together until just combined.
    I usually have to double this recipe.

    Chocolate Zucchini Brownies

    CHOCOLATE ZUCCHINI BROWNIES

    Note - the batter will seem a little dry but don't worry because the zucchini will moisten it when cooking.  I usually don't like to over mix brownies but I would use a mixer for this!  The frosting isn't my favorite but it isn't too bad, use a different one if you like.  Don't over cook these ;)

    Ingredients

    • 1/2 cup vegetable oil
    • 1 1/2 cups white sugar
    • 2 teaspoons vanilla extract
    • 2 cups all-purpose flour
    • 1/2 cup unsweetened cocoa powder
    • 1 1/2 teaspoons baking soda
    • 1 teaspoon salt
    • 2 cups shredded zucchini
    • 1/2 cup chopped walnuts
    •  
    • 6 tablespoons unsweetened cocoa powder
    • 1/4 cup margarine
    • 2 cups confectioners' sugar
    • 1/4 cup milk
    • 1/2 teaspoon vanilla extract

    Directions

    1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
    2. In a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread evenly into the prepared pan.
    3. Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched. To make the frosting, melt together the 6 tablespoons of cocoa and margarine; set aside to cool. In a medium bowl, blend together the confectioners' sugar, milk and 1/2 teaspoon vanilla. Stir in the cocoa mixture. Spread over cooled brownies before cutting into squares.

    Zucchini Alfredo

    ZUCCHINI ALFREDO
    *I got this off of allrecipes and made a few changes because it works better and has a little more taste

    1 Tbsp olive oil
    4 cloves garlic, minced
    1 onion, diced
    4 C zucchini, shredded
    8 oz cream cheese
    1/2 C (or more) milk
    1/4 C fresh basil, chopped
    Garlic salt to taste (be generous)
    Pepper to taste

    In a large pan heat oil and stir in garlic and onions.  Cook till tender (1-2 minutes).  Mix in zucchini and cook until most of the moisture from the zucchini has evaporated (around 10 minutes).  Add milk and cream cheese.  Cook until melted.  Add in basil and seasoning.  Serve over pasta with Parmesan cheese.

    Note - you will need to adjust the amount of milk to get the sauce consistency you want

    Chocolate Zucchini Bread

    CHOCOLATE ZUCCHINI BREAD

    1/2 cup butter, softened (or half applesauce, half butter)
    1 cup sugar
    2 eggs
    1 teaspoon vanilla extract
    1/8 - 1/4 C buttermilk
    1 1/2 cups all-purpose flour
    3 tablespoons baking cocoa
    1/2 teaspoon baking soda
    1/2 teaspoon baking powder
    1/2 teaspoon ground cinnamon
    1 cup grated unpeeled zucchini
    1/2 cup semisweet chocolate chips

    In a large mixing bowl cream the butter and sugar.  Beat in eggs and vanilla.  Combine dry ingredients in separate bowl and gradually add to mixture.  This makes a thick mixture!  Stir in zucchini and chocolate chips.  Spoon into a bread pan.  Bake at 350 degrees for about 45 minutes or until done.  

    You can add in nuts or flaked coconut! 

    PS tried this in my bread maker and it was perfect.  If you have a cake setting try it (added a pinch more of baking powder, melted the butter and don't add the milk) and it was great.  Drop the chocolate chips in when your bread maker says to add them :)

    Zucchini Casserole

    ZUCCHINI CASSEROLE

    6 medium zucchini
    1/2 C chopped onion
    1 C cottage cheese
    1 C Monterey Jack cheese
    2 eggs, beaten
    1 C soft bread crumbs
    3/4 tsp dill weed
    dash of garlic salt/onion salt

    Wash, peel and dice zucchini.  Simmer for 5 minutes in salt water with onion.  Drain and place in 1 1/2qu casserole dish.  Combine other ingredients (except bread crumbs) and pour over the zucchini.  Sprinkle with bread crumbs.  Bake at 350 for about 15 minutes.

    Note - I really like this with the original recipe but sometimes the kiddos refuse the chopped up zucchini so...
    I'll shred the zucchini and lightly stir everything together leaving the cottage cheese mix mostly on top (even the bread crumbs) and then top it with a few more bread crumbs.

    Zucchini Bars

    3 eggs
    1/2 C applesauce
    1/2 C vegetable oil
    1 1/2 C white sugar
    2 tsp vanilla extract
    2 1/2  all-purpose flour
    1/2 tsp baking powder
    2 tsp baking soda
    1 tsp cinnamon
    2 cups grated zucchini

    3 Tbsp butter
    4 oz (1/2 package) cream cheese
    1 tsp vanilla
    2 1/2 cups confectioners' sugar

    Preheat oven to 350 degrees.  Grease 15 1/2 x 10 pan (a bar pan).

    In a large bowl, mix together the eggs, oil, sugar and vanilla until blended. 

    Combine the flour, baking powder, baking soda and salt; stir into the sugar mixture. Mix in the zucchini. Spread the batter into pan.

    Bake for 20 to 25 minutes in the preheated oven. Allow bars to cool completely before frosting. To make the frosting, blend together the margarine, cream cheese and confectioners' sugar. Spread over cooled bars before cutting.
